5 Delicious Spanish Salads To Make This Summer

Try these 5 delicious recipes for typical Spanish salads, fresh, simple and very easy to make. Dressing is a fundamental aspect of any self-respecting salad, and what better formula than with La Española olive oil.

Summer calls for light, fresh salads that pack a serious flavour punch, and Spain knows how to make some of the best. With olive oil of course! 

From Mallorca to Andalucia and everywhere in between, we have listed five of the most delicious spanish salads for you to enjoy over this long, hot Aussie summer. Recipes included! 



1. Ensalada Mixta 


Ensalada Mixta translates to “mixed salad” and is a fresh twist on the classic garden salad that is sure to tingle your taste buds this summer. The primary ingredients are eggs, crisp veggies and tuna and it is the ideal Mediterranean Diet-approved dish. 

Use iceberg lettuce as a bed for the rest of the ingredients. Add 1 cucumber, 3 chopped tomatoes, a grated carrot and 1 beet. Top with a can of tuna (drained), asparagus, a can of corn and half a red onion. Finish with 1-3 sliced hard boiled eggs (cooled) and drizzle with a dressing made from a mix of La Española Extra Virgin Olive Oil Medium Flavour and sherry vinegar. Finish with a sprinkle of salt and pepper. Delish! 



2. Pipirrana 


Pipirrana is arguably the most famous Spanish salad, and is ideal eaten on its own or alongside a main meal of fish or meat. It takes just minutes to prepare, and is made with everyday veggies and condiments you probably have on hand. 

Soak 1 diced medium red onion in water for 10 minutes, then drain. Place 500g of seedless, diced tomatoes, 1 large diced cucumber and 1 large diced green capsicum in a bowl and stir in the onions. Crush two cloves of garlic in a mortar and pestle. Add a pinch of cumin, a pinch of salt and a few drops of La Española Extra Virgin Olive Oil Medium Flavour and pound these together until they are a paste.

In a separate bowl mix 3 tablespoons of the same olive oil with 2 tablespoons of sherry vinegar, add the garlic paste and mix well. Pour this dressing over the salad ingredients and enjoy! This recipe is featured on our Spanish recipes website page. Check out the rest of our tasty recipes! 



3. Ensaladilla Rusa 


Ensaladilla Rusa may translate to “Russian salad”, but it is very much Spanish. In fact, the popular tapas, made with potatoes, tuna, olives and more, originated in the same region as La Española Olive Oil - Andalucía! 

Boil 450g of white potatoes and 350g of carrots, dice and add to a bowl together. Chop 5 hard boiled eggs and 50g of green olives and add to the bowl. Add 150g of tuna in oil and mix well. Add salt, pepper and 300g of mayonnaise. 

Drizzle the salad with either our Mild or Medium La Española Extra Virgin Olive Oil varieties - it’s up to you. Many Spaniards make their own mayonnaise for this recipe, with quality oil of course. This recipe features on our Spanish recipes page. 



4. Red Onion and Orange Salad


Quick to throw together, low on calories and high on taste, Spain’s red onion and orange salad is a classic side you will fall in love with. 

On a serving platter, arrange 4 cups of torn romaine lettuce, 2 medium oranges (peeled and sectioned) and 1 sliced red onion, organised into rings. 

In a separate bowl, mix together ¼ cup of La Española Extra Virgin Olive Oil (Mild or Medium - your choice!), 3 tablespoons of red wine vinegar, 1 teaspoon of sugar, and a pinch of salt and pepper. Drizzle this over the salad and enjoy! 



5. Trempó 


Trempó is a salad from Mallorca made with simple yet delicious ingredients like capsicum, tomato and onion. It’s the perfect Spanish side to cool down on a hot summer day.

Add 5 diced tomatoes, 3 green capsicum (cored and diced) and 1 red onion, peeled and finely chopped, to a bowl. Drizzle 4 tablespoons of La Española Extra Virgin Olive Oil Medium Flavour over the top and add a teaspoon of salt to taste. Mix well and devour!
