Warm salad with salmon

We love fresh salmon! This recipe combines delicious grilled veggies and beautful salmon to give you a nutritious and healthy boost for the winter!

Ingredients

- Lettuce sprouts, spinach sprouts and arugula
- 1 green pepper
- 1 courgette
- 100gr of cooked peas
- 1 red onion
- 200 gr of salmon
- Cooked lentils

For the dressing:
- 4 tablespoons La Española Extra Virgin Olive Oil
- 2 tablespoons mustard
- 1 tablespoon honey
- Salt and pepper to taste

Directions

For the salad:

  • Cook the salmon loins however you like them (pan-fried, barbecued etc.) but make sure they are crispy!
  • Roast all the vegetables on the grill, be careful that the pepper takes longer to cook than the onion. 
  • Use natural lentils already cooked and take them out of their container a few minutes before using them.
  • Prepare a bed of lettuce sprouts, place the grilled vegetables, a generous amount of lentils and the salmon fillets.

For the vinaigrette:

  • Keep the honey at room temperature and mix with the mustard.
  • Gradually add the oil while whisking.
  • Add the rest of the ingredients.
