Huevos rotos con jamón

Huevos rotos con jamón is one of the most iconic tapas in Madrid. Don't let its humble ingredients fool you: the flavour of this dish is to die for! The best part? It is super easy to make!

  • 0.5L La Española Mild & Light Olive Oil
  • 160g potatoes                                                     
  • 2 free range eggs
  • 40g Spanish ham – Jamón ibérico
  • La Española Extra Virgin Olive Oil to drizzle (whether Medium or Mild, that’s your choice!)
  • Salt and pepper to taste

Directions

  1. Wash and peel the potatoes.
  2. Cut them into sticks and fry in a pan with La Española Mild & Light Olive Oil for 8 minutes until golden brown. Add salt and save for later.
  3. Fry the eggs and place them on top of the potatoes. That way, you get to enjoy the scrumptious yolk oozing its way through the salty fried potatoes.
  4. Add the ham on top of the eggs. You can use chorizo instead of ham, or even add some onions. If you are vegetarian, just skip this step.
  5. Drizzle with La Española Extra Virgin Olive Oil for a special final touch.
  6. Enjoy!
