Ingredients
- 0.5L La Española Mild & Light Olive Oil
- 160g potatoes
- 2 free range eggs
- 40g Spanish ham – Jamón ibérico
- La Española Extra Virgin Olive Oil to drizzle (whether Medium or Mild, that’s your choice!)
- Salt and pepper to taste
Directions
- Wash and peel the potatoes.
- Cut them into sticks and fry in a pan with La Española Mild & Light Olive Oil for 8 minutes until golden brown. Add salt and save for later.
- Fry the eggs and place them on top of the potatoes. That way, you get to enjoy the scrumptious yolk oozing its way through the salty fried potatoes.
- Add the ham on top of the eggs. You can use chorizo instead of ham, or even add some onions. If you are vegetarian, just skip this step.
- Drizzle with La Española Extra Virgin Olive Oil for a special final touch.
