Red plum, strawberry, ricotta, mint and cinammon toast

This month in our series Olive Oil On a Toast we suggest you a sweet proposal. The secret? toasting the bread in olive oil and macerating the fruit with lemon juice, cinnamon and brown sugar. We're sure you'll be making it quite often!

Sliced bread
Raspberries
Red plums
1 tablespoon brown sugar
1 tablespoon cinnamon
juice of ½ lemon
Ricotta cheese
Fresh mint leaves
La Española Extra Virgin Olive Oil Mild Flavour

Directions

Start by slicing the red plums into thin slices. Add the raspberries, sliced plums, cinnamon, sugar and lemon juice to a bowl and leave to macerate for a few minutes.

Meanwhile, toast the bread on both sides in a frying pan with a drizzle of olive oil, allowing it to soak up the oil and all its aroma.

Spread some ricotta cheese, add the macerated plums and raspberries, a little of the maceration juice, add some fresh mint leaves and enjoy every bite.
