Without further ado, let's get to those all-new mouthwatering recipes! 


1. Garlic Mushrooms with Truffle Oil

This garlic mushrooms with truffle oil recipe is a classic dish of Madrid. It’s easy to make and of course, combined with the delicious flavours of our EVOO with White Truffle it is absolutely delicious! 

You can serve this dish with bread as a ‘tapa’ or you can use it as a side for your meat dishes. This recipe will serve 4 as a starter and will take 5 minutes to prepare and less than 15 minutes to cook. 

Ingredients:

  • 500 g seasonal mushrooms (portobello, chestnuts, shitakes, oysters)
  • 6 tbsp of La Española Olive Oil
  • Salt and freshly ground black pepper
  • 6 cloves garlic, finely chopped
  • 2 sprigs of thyme
  • 100 ml dry white wine
  • 2 tbsp freshly chopped flat leaf parsley
  • 1 pinch of strips of lemon zest

To Serve:

Drizzle of La Española Truffle Oil
Shaving of Manchego cheese (you can find this at many deli counters or at your local food market) 

Directions: 

  1. Clean the mushrooms. Cut large mushrooms into smaller chunks. 
  2. Heat the frying pan over a medium-high heat, pour in the olive oil and fry mushrooms for 8-10 minutes, season with salt and pepper and fry for another 2 minutes.
  3. Add the garlic and thyme and stir. Cook for 2-3 minutes. Pour in the wine and flambé for 30 seconds, until reduced.
  4. Stir in the parsley and lemon zest. Place in a serving dish and drizzle over the EVOO with White Truffle oil. Scatter with Manchego cheese and serve immediately with crusty bread.


2. Truffle & Garlic Aioli 

A staple condiment in Spanish cuisine, aioli is a rich sauce that can be used as an accompaniment to croquetas, fish, or with thick cut potato wedges. We’ve taken this Catalonian dish and made it more special by adding our La Española Extra Virgin Olive Oil with White Truffle to the mix!

This recipe will serve 4 and will take no longer than 5 minutes to prepare and 10 minutes to create. 

Ingredients

  • 1 egg
  • 1 tbsp lemon juice
  • ½ tsp salt
  • 2 cloves garlic
  • 200 ml La Española Light In Colour Olive Oil
  • 30 ml La Española Truffle Olive Oil

Directions

  1. Place the egg, lemon juice, salt, garlic cloves and the oils in a small jug. 
  2. Place the stick blender on the bottom of the jug and blitz all the ingredients on the bottom before slowly bringing the blender to the top until it completely emulsifies. 
  3. If you have the bad luck that your aioli splits, just start again with a bit of water in the jug while you pour the split mixture into it while you blend it. 


3. Truffle Tortilla


Tortilla de patatas is one of the most popular Spanish dishes. Add a complex and delightful twist to this classic Mediterranean dish with a splash of our white truffle olive oil. 

This recipe will serve 4 and will take 20 minutes to prepare and 20 minutes to cook. 

Ingredients

For the caramelised onion:

  • 2 tbsp La Española Olive Oil Light
  • 300g Spanish onion, thinly sliced 

For the tortilla:

  • 8 eggs
  • 150g salted crisps
  • 1 tbsp truffle oil
  • Salt and freshly ground black pepper
  • 3 tbsp La Española Extra Virgin Olive Oil

To serve:

La Española Truffle Oil, for drizzling
Crisp green salad

Directions

  1. Heat olive oil in a frying pan over a high heat. Cook onions for 5 minutes until golden and starting to caramelise.
  2. In a large bowl, beat the eggs, then stir in the crisps, caramelised onion, truffle oil and season. Leave to stand for 15 minutes for the crisps to soak into the egg. 
  3. Heat the olive oil in a 20cm non-stick pan, over a medium heat, pour in the tortilla mix. Reduce the heat to low and cook for 8-10 minutes, without stirring, until set.
  4. Place under a preheated hot grill and cook for 2-3 minutes until the top is golden brown, or invert onto a plate and carefully slide back into the pan. Cook for a few minutes until golden.
  5. Transfer to a board and serve cut into wedges with a salad.
