In the kitchen with Kat: Chatting with a keen home cook

We love chatting with fellow foodies!

Here at La Española Olive Oil, we love chatting with fellow foodies, from Aussie home cooks to our team in Spain, discussing everything from travel to the Mediterranean to olive oil. 

This month, we spoke to a home cook that is always impressing us on Instagram. Kat is such a keen culinary creative, and understands the power of good food for the body and soul

Let’s head over to Western Australia to Kat’s kitchen together… 

Hi there Kat! Tell us a little about yourself and where you’re from. 

Hello everyone, I’m Kat, 35 years of age, born in Australia and live in Perth, with an Italian background from my mum’s side - hence the love of cooking

We see you are quite a foodie. What do you love most about food and cooking? 

I love how food brings anyone and everyone together. You can be creative or keep it simple, use homegrown produce or source awesome products from all over the world these days. 

What do you love about olive oil? 

It’s so versatile and can be used in so many ways! It’s healthy, delicious and reminds me of my nanna who used so much of it in everything and she knew good quality was key! Olive oil always makes me think of her, she would fry the most delicious cutlets in olive oil and dress her salads to perfection. I love when food brings back memories

What is your favourite way to use olive oil? 

I love replacing butter with olive oil when baking. You get this silky smooth texture to your cakes, they’re lighter and so much healthier for you. 

What have been your favourite culinary creations over summer? 

I have loved throwing a mezze platter together, with homemade pizza bread and hummus (nothing beats homemade - nothing) baked brie with dukkah, olives, salami. It’s simple and pleasing to any guest, with a glass of prosecco to wash it all down and of course the warm summer sun on you - perfection!

What are your favourite food memories from your travels?

Visiting Italy with my mum was amazing. Food is so different over there, it’s really simple but so delicious. Woodfired Margherita pizzas to fancy risotto, or even making bigne with family. I could eat a tomato like an apple and it was divine! Food is not rushed in Italy - it is enjoyed! I just loved it.

What will you be whipping up as the weather gets cooler?

I think I’ll start getting into soups, pastas and making my own bread again! Any excuse for the oven to be on and the hips to grow to keep you warmer in winter.
